why is the filter holder filled with fluid after making coffee. Double cup doesn't seem to be a double cup

Extremely pleased so far

I'd been operating with an older 3.5 bar basic Krups espresso maker which has a great milk frother and made OK espresso but with zero crema. My daughter has the Casabrews CM5418, which really impressed me. I chose to get the 3700 Essential as the pressure gauge on her 5418 stopped working, but it still pulls a great shot. I've been extremely happy with the result! The machine is so easy to use, and I feel like a barista at home. The frother is a little trickier to learn than the old Krups one was but I'm getting the hang of it. I highly recommend this espresso maker.

Are any of the internal filter parts plastic?

I don't think so. If by "internal filter parts" you mean something sealed inside the machine, I can't tell. The portafilter has a plastic handle (to be expected) which is quite sturdy and feels like high quality. It's like handles on quality cookware. Everything else is metal. Build quality is great.

However, the entire handle is made of durable aluminum alloy, with a plastic piece at the bottom of the handle. This design is specifically aimed at reducing heat loss during use.
